White Wine & Oregon Truffle Tagliatelle
A quick, simple, and luxurious truffle pasta for two.
*The trick? Treat the Brussels right — blanch, dry, and sear them until golden and crisp. Let the bacon and blue cheese do their work, and finish it all with just a hint of lavender and Saba for something truly special.
Ingredients
1 shallot, julienned
3 cloves garlic, minced
2 medium white truffles, shaved (plus more for finishing)
2 tablespoons butter
½ cup heavy cream
¼ cup white wine
½ cup Pecorino or Parmesan, grated
Salt, to taste
Freshly ground black pepper, to taste
Instructions
In a sauté pan over medium heat, melt the butter and add the julienned shallot. Cook for about 4 minutes, until softened.
Add the minced garlic and cook briefly until fragrant.
Shave one white truffle directly into the pan with the butter, garlic, and shallot. Reduce heat to medium-low and sauté for 2–3 minutes.
Deglaze the pan with white wine and allow it to cook off for 1–2 minutes.
Stir in the heavy cream, season with salt and black pepper, and simmer gently until the sauce begins to thicken.
Add the grated Pecorino (or Parmesan) and stir until fully incorporated.
Toss the sauce with freshly cooked tagliatelle until well coated.
Plate the pasta and finish with additional grated cheese and a generous shaving of white truffle.
Garnish Options:
Pea tendrils or sunflower shoots for a fresh, earthy note
Baby arugula can be used in a pinch
